Soup is without a doubt one of my favourite winter eats!  This is my mum's homemade lentil soup recipe and it's DELICIOUS!  It's simple, quick and easy to make, it costs around £2 and will feed at least six people!  Get some crusty bread, heat it up, lather on the butter and enjoy ... Recipe below.

What you will need:
1x Large pan
1x Large bowl
2x Chicken Breast (optional)
1x Soup pack from Lidl or Asda OR;
3x Carrots, 1 Parsnip, 1 small Turnip & 1 Onion 
3x Chicken Stock Cube 
Half packet of Red Lentils
Crusty bread or bread of your choice 

*note, where possible soak the lentils either over night or for a few hours (not necessary, but will help them cook a little quicker)

Fill your large pan with 3/4 water and bring to the boil.
Chop your chicken and all of your veg into medium chunks - put to one side.
Once the water has boiled add in your 3 chicken stock cubes, stir until fully dissolved. 
Add in your chopped chicken, all of your veg and your lentils, turn down to a low to medium heat and cook for around 2 hours, stirring regularly.
Once you have cooked the veg and chicken for 2 or so hours (or until the veg is soft),  scoop out the chunks of veg and place in the large bowl.  Mash or blend down the veg (depending on how thick or textured you like your soup will depend on whether you want to mash or blend it) and then return it to the pan, cook for a further 10 minutes, then serve.

Viola!  Add salt and pepper as required.

I absolutely love this recipe, it's an old classic that my mum has made for years, it's my favourite kind of soup at this time of year.  I love coming home, heating up a crusty roll and dunking it into a huge bowl of my mums homemade soup!  Let me know if you try this recipe, I know you'll love it.
