SLIMMING WORLD - MEAL OF THE WEEK #2 - SALT & CHILLI CHICKEN




It's the end of another week on Slimming World, it's weigh day today and I am really hoping for at least a 2lb loss. If I get my loss this week I will have hit my first milestone of half a stone.  I am feeling so proud of myself, I have stuck to plan for 90% of the time, the odd day I have had off plan is due to birthdays or forgetting my lunch (fail to plan, plan to fail!).  I am still really enjoying the plan and instead of feeling like its a hindrance on my life it's starting to just feel part of my life.  Once you get the hang of syns and healthy extras there really is no reason why you can't stick to plan.

Anyway, this past week we tried out a new recipe.  We went for the Salt & Chilli Chicken and boy oh boy this SYN FREE meal didn't disappoint.  My husband thought it needed some sauce, however I really liked it without.  I am going to try and find a free sweet chilli sauce recipe to compliment this next time.  I think there are a few of these recipes around, slightly varying from one another but here's the one we used.




Ingredients:


2-4 chicken breasts sliced 
2 eggs
1 tsp chilli flakes
1 large onion
2 green peppers
tspn of lazy garlic or 1 garlic clove crushed 
1 tsp coarse sea salt
1/2 packet of dry Smash potato mix
Light soya sauce
1 Chicken oxo
Fry Light
Packet or boiled rice / noodles (remember to cook these in time with the rest of the dish)


Method:

  • Preheat your oven to 180/200 depending on your oven.
  • Remove all visible fat from your chicken and slice it into small fillets or pieces
  • Cut up your onion and green pepper into thin slices (or however you like them)
  • Beat together 2 eggs - put aside 
  • Mix together the smash, sea salt and chicken oxo (crumble it in)
  • Take your chicken fillets / pieces and dip them into the eggs then roll into the smash mix.  Do this for all of the chicken pieces
  • Place the coated chicken on some greaseproof (baking) paper and place on to an oven tray.
  • Place the chicken in the oven for 25 minutes or until the chicken is cooked

In the meantime... (around 10 minutes before the chicken is ready)

  • Heat a wok and spray in a little Fry Light 
  • Stir fry your chopped onions, peppers, chilli and garlic add a splash or 2 of light soya sauce.  Cook until soft or as you like.
  • When the chicken is cooked through , add it to the wok along with the rest of the ingredients and stir fry for a few minutes.

Serve with Rice or Noodles.  Note* if you use microwavable rice then you may need to syn it, always check packet rice.  If you boil it yourself then it's free!
